Frozen peanut butter banana bites

Let's face it, desserts make people happy....but usually just in the moment they're eating them. Then comes the uncomfortable fullness or regret for indulging in something you know wasn't good for you.


Here is a dessert that you can feel good about because it's small, yet satisfying, and made with very simple ingredients that won't make you feel guilty.


Ingredients:

1 banana

peanut butter

1/2 cup chocolate chips


Slice the banana and place slices in single layer on parchment-lined baking sheet. Spread a small amount of peanut or almond butter on half of the banana slices and cover with another slice, then place entire sheet in freezer.

While the banana slices are freezing, set up a small double-boiler to melt chocolate. Or you can melt in microwave.

This next part needs to go quick. Dip half of each sandwich in the melted chocolate and then refreeze.

The chocolate will set almost immediately for you to enjoy or you can keep in the freezer for later.
